If you're running a 10 pound intercooled kit on a 2000, you should be pulling in the 375-395 RWHP range. Get rid of the platninums if you have not already. Gap them to .035 to .040. Even with a conservative tune you should be putting down more than is in your sig.
I'm running the same setup you are, and before the rebuild, was able to pull a 410/400.
